Caesar Dressing (with no eggs or anchovies)
1/4 C. plain yogurt
1 T. lemon juice
1/2 tsp. Worcestershire sauce
1 garlic clove, minced
1/8 tsp. salt
1/8 tsp. ground black pepper
1/4 C. olive oil
In a small bowl whisk the yogurt with the lemon juice, W. sauce, garlic, salt and pepper. Drizzle in the olive oil and continue to whisk. Use immediately.
Coat 1 head romaine lettuce with croutons, 1/2 C. freshly grated parmesan cheese, and the dressing.
